  1. 1. Wash the leek thoroughly.
  2. 2. Cut the white and light green parts of the leek into thin diagonal strips.
  3. 3. Quarter the apples.
  4. 4. Peel the apple quarters.
  5. 5. Remove the core from the apples.
  6. 6. Slice the apples into thin crosswise slices.
  7. 7. Season the chicken fillets with salt and pepper.
  8. 8. Heat 1 tablespoon of oil and 1 tablespoon of butter in a large pan over medium heat.
  9. 9. Fry the chicken fillets on each side for about 5 to 6 minutes until golden brown.
  10. 10. Remove the cooked chicken fillets from the pan and keep them warm.
  11. 11. Add the remaining butter to the same pan.
  12. 12. Sauté the prepared leek and apple slices in the butter.
  13. 13. Season the vegetables with salt and pepper.
  14. 14. Add a pinch of ground nutmeg.
  15. 15. Pour in the broth.
  16. 16. Simmer the vegetables uncovered over low heat for 2 to 3 minutes.
  17. 17. Plate the chicken fillets with the apple and leek vegetables.
  18. 18. Serve the dish immediately.
