🍽️ Crispy Green Tomatoes with Fresh Tomato and Onion Relish

Ingredients
- 500 g green tomatoes
- salt
- pepper from the mill
- 4 tsp olive oil
- 150 g beefsteak tomato (1 beefsteak tomato)
- 4 small firm tomatoes
- 3 spring onions
- 1 garlic clove
- 2 tbsp olive oil
- salt
- cayenne pepper
- 1 pinch sugar
- 1 pinch cumin
Instructions
- 1. Rinse the green tomatoes thoroughly.
- 2. Slice the tomatoes into thick rounds.
- 3. Season the tomato slices with salt and pepper.
- 4. Heat olive oil in batches in a non-stick frying pan.
- 5. Fry the tomato slices briefly on both sides over high heat.
- 6. Let the fried tomatoes cool down completely.
- 7. Score a cross into the bottom of the beefsteak tomato.
- 8. Pour boiling water over the tomato for one minute.
- 9. Drain the hot water and shock the tomato with cold water.
- 10. Peel the skin off the beefsteak tomato.
- 11. Chop the peeled tomato very finely or mash it.
- 12. Wash the remaining tomatoes and dice them finely.
- 13. Clean the spring onions and wash them.
- 14. Slice half of the spring onions into thin rings.
- 15. Slice the remaining half of the spring onions into thin strips.
- 16. Peel the garlic.
- 17. Mix the cooled green tomatoes with the spring onion rings.
- 18. Press the garlic directly into the mixture.
- 19. Stir olive oil into the mixture.
- 20. Season the mixture with salt, cayenne pepper, sugar, and cumin.
- 21. Place the tomato-onion mixture on top of the fried green tomatoes.
- 22. Garnish the dish with the spring onion strips.
