  2. 2. Pat the fish dry with a kitchen towel.
  3. 3. Season the herrings with salt and pepper.
  4. 4. Coat the fish in flour until they are completely covered.
  5. 5. Shake off any excess flour from the fish.
  6. 6. Heat oil and butter in a large frying pan.
  7. 7. Fry the herrings for about 8 minutes until crispy.
  8. 8. Turn the fish regularly while frying.
  9. 9. Wash the parsley under running water.
  10. 10. Shake the parsley dry.
  11. 11. Finely chop the parsley.
  12. 12. Plate the finished herrings.
  13. 13. Garnish the fish with the chopped parsley.
  14. 14. Add lemon wedges as decoration.
