  4. 4. Press the potatoes through a potato ricer.
  5. 5. Let the potatoes steam briefly to cool down.
  6. 6. Add the egg and flour to the potatoes.
  7. 7. Season the mixture with salt and nutmeg.
  8. 8. Knead everything into a smooth dough.
  9. 9. Add only enough flour until the dough stops sticking.
  10. 10. On a floured work surface, form finger-thick rolls from the dough.
  11. 11. Cut the rolls into pieces about 1.5 cm wide.
  12. 12. Roll the gnocchi over the back of a fork to create texture.
  13. 13. Cover the gnocchi with a kitchen towel.
  14. 14. Let the gnocchi rest for about 15 minutes.
  15. 15. Boil the peas and fava beans in boiling salted water for about 5 minutes until al dente.
  16. 16. Drain the vegetables and shock them with cold water.
  17. 17. Cook the gnocchi in boiling salted water for about 5 minutes until done.
  18. 18. Melt the butter in a pan until it foams slightly.
  19. 19. Fry the drained gnocchi in the butter until golden brown.
  20. 20. Add the fava beans, peas, lemon zest, and 2 tablespoons of lemon juice to the pan.
  21. 21. Season the dish with salt and pepper.
  22. 22. Serve the gnocchi sprinkled with mint and Parmesan.
