🍽️ Crispy Gnocchi with Peas, Fava Beans, and Mint

Ingredients
- 1 kg floury potatoes
- salt
- 1 egg
- 200 g flour
- nutmeg
- flour (for working)
- 200 g peas
- 200 g fava bean (shelled)
- 50 g butter
- 0.5 untreated lemon (zest and juice)
- pepper (from the mill)
- 1 handful mint
- 40 g grated parmesan
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes in salted water for about 30 minutes until tender.
- 3. Drain the potatoes and peel them.
- 4. Press the potatoes through a potato ricer.
- 5. Let the potatoes steam briefly to cool down.
- 6. Add the egg and flour to the potatoes.
- 7. Season the mixture with salt and nutmeg.
- 8. Knead everything into a smooth dough.
- 9. Add only enough flour until the dough stops sticking.
- 10. On a floured work surface, form finger-thick rolls from the dough.
- 11. Cut the rolls into pieces about 1.5 cm wide.
- 12. Roll the gnocchi over the back of a fork to create texture.
- 13. Cover the gnocchi with a kitchen towel.
- 14. Let the gnocchi rest for about 15 minutes.
- 15. Boil the peas and fava beans in boiling salted water for about 5 minutes until al dente.
- 16. Drain the vegetables and shock them with cold water.
- 17. Cook the gnocchi in boiling salted water for about 5 minutes until done.
- 18. Melt the butter in a pan until it foams slightly.
- 19. Fry the drained gnocchi in the butter until golden brown.
- 20. Add the fava beans, peas, lemon zest, and 2 tablespoons of lemon juice to the pan.
- 21. Season the dish with salt and pepper.
- 22. Serve the gnocchi sprinkled with mint and Parmesan.
