🍽️ Crispy Duck Breast with Creamy Blue Cheese Sauce

Ingredients
- 2 duck breast fillets (approx. 400 g each)
- salt
- pepper (from the mill)
- 1 tbsp ghee
- 1 shallot
- 1 tbsp oil
- salt
- white pepper
- nutmeg
- 50 ml white wine
- 125 g whipping cream
- 150 g Gorgonzola
Instructions
- 1. Rinse the duck breasts under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Season the duck breasts generously with salt and black pepper.
- 4. Heat ghee (clarified butter) in a frying pan.
- 5. Place the duck breasts skin-side down into the hot pan.
- 6. Fry the skin side for about 10 minutes until crispy.
- 7. Turn the breasts over and fry the meat side for another 8 minutes.
- 8. Remove the duck breasts from the pan.
- 9. Wrap the meat tightly in aluminum foil.
- 10. Let the breasts rest in the foil for at least 10 minutes.
- 11. Peel a shallot and chop it very finely.
- 12. Sauté the shallots in some oil until translucent.
- 13. Deglaze with white wine and reduce the liquid by half.
- 14. Add cream and bring the sauce to a boil.
- 15. Season the sauce with salt, pepper, and a pinch of ground nutmeg.
- 16. Turn off the heat.
- 17. Crumble blue cheese into the hot sauce.
- 18. Stir until the cheese has completely melted.
- 19. Finally, adjust the finished sauce with fresh pepper.
- 20. Serve the sauce together with the duck breast.
