🍽️ Crispy Artichokes with Capers Dip

Ingredients
- 60 g capers (jar)
- 0.5 handful parsley
- 100 ml olive oil
- 0.5 lemon (juice)
- 16 small artichokes
- salt
- 8 garlic cloves
- 200 g dark olives (pitted)
- pepper
Instructions
- 1. Put the capers and the parsley leaves into a blender.
- 2. Add about 50 milliliters of olive oil and 3 to 4 tablespoons of lemon juice.
- 3. Blend the mixture until it forms a smooth sauce.
- 4. Use kitchen scissors to cut off the tips of the artichokes.
- 5. Remove the tough outer leaves of the artichokes.
- 6. Cut the artichokes in half lengthwise.
- 7. Immediately drizzle the halved artichokes with lemon juice.
- 8. Place the artichokes in plenty of boiling water.
- 9. Cook them for about 7 minutes.
- 10. Shock the artichokes by placing them in cold water.
- 11. Let the artichokes drain well.
- 12. Peel the garlic.
- 13. Drain the olives.
- 14. Heat the remaining oil in a frying pan.
- 15. Fry the artichokes and garlic until light brown for 5 to 10 minutes.
- 16. Let the fried mixture cool down briefly.
- 17. Mix the cooled mixture with the blended caper sauce.
- 18. Season the dish to taste with lemon juice and pepper.
