🍽️ Crispy Cinnamon-Sugar Almonds

Ingredients
- 125 g raw cane sugar
- 0.5 tsp cinnamon powder (Ceylon)
- 2 small pinch vanilla powder
- 1 pinch salt
- 200 g almond kernels (with skin)
Instructions
- 1. Add 80 milliliters of warm water, sugar, cinnamon, vanilla, and a pinch of salt to a pan.
- 2. Heat the mixture over medium temperature and let it simmer.
- 3. Stir continuously until the sugar has completely dissolved in the water.
- 4. Add the almonds to the sweet liquid.
- 5. Bring the mixture to a boil while stirring constantly.
- 6. Continue cooking the almonds over medium to high heat.
- 7. Stir a few times with a wooden spoon.
- 8. Wait until all the liquid has evaporated.
- 9. The sugar will now crystallize and the almonds will look white.
- 10. Reduce the heat to medium.
- 11. Stir the almonds until the sugar begins to melt slightly.
- 12. Remove the pan from the heat as soon as the almonds are slightly glossy.
- 13. Line a baking sheet with baking paper.
- 14. Transfer the almonds immediately onto the tray.
- 15. Separate the almonds from each other using two forks.
- 16. Let the almonds cool down completely.
