🍽️ Homemade Cured Salmon

Ingredients
- 1 tbsp juniper berries
- 1 tbsp peppercorns
- 3 tbsp raw cane sugar
- 6 tbsp sea salt
- 5 sprigs dill
- 800 g very fresh salmon fillet (kitchen-ready with skin; 1 very fresh salmon fillet)
Instructions
- 1. Coarsely crush the juniper berries and peppercorns in a mortar or with the blade of a knife. Mix them in a bowl with sugar and salt.
- 2. Wash half of the dill, shake it dry, pluck off the leaves and chop them finely. Mix them into the seasoning salt mixture and spread about half of it in a shallow dish.
- 3. Rinse the salmon, pat it dry, and place it skin-side down on the spice mixture. Spread the remaining salt over the fish, press it down lightly, and let it cure covered with cling film in the refrigerator for approx. 24 hours.
- 4. Remove the salmon from the cure before serving, rinse it, and pat it dry. Wash the remaining dill, shake it dry, pluck off the leaves and chop them finely. Sprinkle it evenly over the cured salmon and serve it sliced into thin pieces.
