🍳 Baked Oatmeal with Berries and Nuts

Ingredients
- 200 g Oat flakes
- 1 pinch Salt
- 50 g Walnuts (or other nuts)
- 200 g Berries
- 180 ml Oat drink (oat milk)
- 1 Vanilla pod (pulp)
- 5 g Coconut oil (1 tsp; melted)
- 1 tbsp Whole cane sugar
- 200 g Coconut yogurt
Instructions
- 1. Pour 400 milliliters of boiling water over the oatmeal flakes in a bowl.
- 2. Add a pinch of salt and stir everything well.
- 3. Let the oatmeal flakes soak for 10 minutes.
- 4. Chop the walnuts coarsely.
- 5. Wash the berries thoroughly.
- 6. Mix the oatmeal with the oat milk, vanilla seeds, walnuts, and berries.
- 7. Grease a baking dish (approx. 26 x 20 cm) with the melted coconut oil.
- 8. Distribute the oatmeal mixture evenly in the dish.
- 9. Sprinkle the whole cane sugar evenly over the top.
- 10. Preheat the oven to 180 degrees (convection 160 degrees or gas mark 2–3).
- 11. Bake the oatmeal in the oven for 20 to 25 minutes.
- 12. Take the finished oatmeal out of the oven.
- 13. Serve the dish preferably while still hot.
- 14. Garnish it to taste with coconut yogurt and fresh berries.
