🍽️ Lamb with Vegetables and Feta in the Oven

Ingredients
- 800 g lamb meat (from the leg)
- 2 garlic cloves
- 400 g waxy potatoes
- 200 g cherry tomatoes
- 400 g beans
- 8 small onions
- 1 red bell pepper
- 40 g black olives (pitted to taste)
- 4 tbsp freshly chopped herbs (e.g. rosemary, thyme)
- sea salt
- 2 tbsp lemon juice
- pepper (from the mill)
- 80 g sheep's cheese (e.g. Kefalotyri)
- 60 ml olive oil
Instructions
- 1. Preheat the oven to 160 degrees Celsius fan-assisted.
- 2. Wash the meat and pat it dry with a kitchen towel.
- 3. Cut the meat into small cubes.
- 4. Peel the garlic cloves.
- 5. Slice the garlic into thin pieces.
- 6. Peel the potatoes.
- 7. Cut the potatoes into small cubes.
- 8. Wash the tomatoes.
- 9. Halve the tomatoes.
- 10. Wash the beans.
- 11. Remove the ends and strings from the beans (trim).
- 12. Peel the onions.
- 13. Wash the bell pepper.
- 14. Halve the bell pepper.
- 15. Remove the inside and seeds of the bell pepper (core).
- 16. Cut the bell pepper into small cubes.
- 17. Mix the meat with all the prepared vegetables.
- 18. Add the olives and the herbs.
- 19. Season the mixture generously with salt.
- 20. Add lemon juice.
- 21. Season with pepper.
- 22. Take four double squares or circles of parchment paper.
- 23. Distribute the meat and vegetable mixture onto the center of the parchment papers.
- 24. Top the portions with the sliced cheese.
- 25. Drizzle everything with the olive oil.
- 26. Fold the ends of the parchment over the filling to form a packet.
- 27. Bake the packets in the oven for about 1.5 hours.
- 28. Open the packets before serving.
- 29. Pepper the dishes lightly again.
