🍽️ Oven-baked chicken with tomato sauce and tacos

Ingredients
- 4 chicken breast fillets
- bell peppers (1 red and 1 yellow each)
- 2 onions
- 1 clove of garlic
- 1 red chili pepper
- 4 oil
- salt
- pepper (from the mill)
- cumin (1 tsp ground each)
- coriander (1 tsp ground each)
- 3 tbsp tomato paste
- 1 can diced tomatoes (approx. 400 g)
- 1 can corn (approx. 200 g)
- 1 can kidney beans (approx. 400 g)
- 100 g taco chips
- 100 g cheddar (coarsely grated)
Instructions
- 1. Cut the chicken meat into cubes of approx. 2 cm.
- 2. Wash the peppers, halve them, remove the core and white skin, and cut into thin strips.
- 3. Peel the onions and garlic and chop them finely.
- 4. Wash the chili pepper, cut it lengthwise, remove the core and white inner skin, and dice it finely.
- 5. Heat 2 tablespoons of oil in a large pan and sear the meat on all sides.
- 6. Season the meat with salt, pepper, 1/2 teaspoon each of cumin and coriander, and remove it from the pan.
- 7. Add onions, garlic, chili, and pepper strips to 2 tablespoons of oil in the pan and sauté them.
- 8. Stir in the tomato paste and sauté briefly.
- 9. Add the chopped tomatoes and bring the sauce to a good boil.
- 10. Return the meat, drained corn, and beans with can liquid to the pan and heat everything.
- 11. Season the sauce tastefully with salt, pepper, cumin, and coriander.
- 12. Transfer the mixture to a greased baking dish (approx. 25 x 30 cm, 5 cm high).
- 13. Insert the tacos into the sauce mixture.
- 14. Sprinkle everything with the cheese.
- 15. Bake the dish in the preheated oven at 200 degrees on the lowest rack until the cheese is golden brown.
