  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Wash the chicken and pat it dry with a kitchen towel.
  3. 3. Peel the shallots and the garlic.
  4. 4. Slice the shallots.
  5. 5. Slice the garlic into rings.
  6. 6. Place half of the shallots into a roasting pan.
  7. 7. Drizzle 3 tablespoons of oil over the shallots in the roasting pan.
  8. 8. Season the shallots with salt and pepper.
  9. 9. Season the chicken inside and out with salt and pepper.
  10. 10. Stuff the chicken with the remaining shallots, garlic, and herbs.
  11. 11. Brush the outside of the chicken with 2 tablespoons of oil.
  12. 12. Place the chicken on top of the shallots in the roasting pan.
  13. 13. Pour the wine over the chicken.
  14. 14. Roast the chicken in the oven for about 45 minutes.
  15. 15. Add a little water if necessary.
  16. 16. Baste the chicken occasionally with the pan juices.
  17. 17. Wash the figs.
  18. 18. Cut the figs into wedges.
  19. 19. Add the fig wedges and pine nuts to the roasting pan.
  20. 20. Brush the chicken with honey.
  21. 21. Finish cooking the chicken and ingredients for another 15 to 20 minutes.
  22. 22. Increase the oven temperature if necessary to brown everything nicely.
