🍽️ Oven-Baked Chicken with Peppers and Cheese

Ingredients
- 1 shallot
- 1 garlic clove
- 3 red bell peppers
- 6 spring onions
- 600 g chicken breast fillet
- 4 tbsp olive oil
- 500 g tomato puree
- salt
- pepper
- 1 tbsp dried herbs of Provence
- 250 g mozzarella
- 100 g grated mountain cheese
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Peel the shallot and the garlic and chop them finely.
- 3. Wash the bell peppers, remove the core, and cut them into small cubes.
- 4. Wash the spring onions, trim the ends, and slice them into small rings.
- 5. Rinse the meat briefly and cut it into coarse pieces.
- 6. Heat the oil in a pan.
- 7. Fry the chicken together with the shallot and garlic on all sides for about 1 to 2 minutes.
- 8. Add the spring onions and the pepper cubes and fry everything for another 3 minutes.
- 9. Season the mixture with salt and pepper.
- 10. Pour in the pureed tomatoes and let the mixture simmer for another 5 minutes.
- 11. Adjust the seasoning of the dish with salt, pepper, and the herbs.
- 12. Transfer the mixture into a baking dish.
- 13. Slice the mozzarella.
- 14. Distribute the mozzarella slices and the alpine cheese evenly over the dish.
- 15. Place the baking dish in the oven for about 5 minutes until the cheese is melted and browned.
- 16. Remove the dish from the oven and serve it hot.
