Ingredients
- 4 Chicken Thighs
- 1 tsp Turmeric
- 1 tbsp Honey
- 2 tbsp Lemon Juice
- 3 tbsp Olive Oil
- Salt
- Cayenne Pepper
- 2 Apples
- 1 Garlic Bulb
- 4 Nectarines
- 6 Sprigs Thyme
Instructions
- 1. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
- 2. Wash the chicken thighs thoroughly. Then pat them dry with a kitchen towel.
- 3. Whisk together turmeric, honey, lemon juice, olive oil, salt, and cayenne pepper in a small bowl to make a marinade.
- 4. Brush the chicken thighs thoroughly with the marinade. Place them in a fireproof baking dish.
- 5. Roast the chicken thighs in the preheated oven for about 45 minutes. Brush them occasionally with the remaining marinade.
- 6. Wash the apples. Cut them into quarters, remove the core, and slice the wedges into bite-sized pieces.
- 7. Slice the garlic cloves horizontally through the middle.
- 8. Blanch the nectarines briefly with hot water. Immediately shock them in cold water. Peel them, quarter the fruit, and remove the pits.
- 9. Arrange the prepared apples, garlic, and nectarines in the dish around the chicken thighs. Add the thyme sprigs.
- 10. Roast the vegetables for another 20 minutes in the oven. Add a little water to the dish if needed to prevent drying out. Gently turn the vegetables and chicken occasionally.
