  1. 1. Wash the spinach thoroughly and remove any woody stems.
  2. 2. Bring a pot of salted water to a boil.
  3. 3. Add the wet spinach to the boiling water and let it wilt briefly (blanch).
  4. 4. Drain the spinach and rinse it with cold water to stop the cooking process.
  5. 5. Let the spinach drain well.
  6. 6. Peel the onion and the garlic.
  7. 7. Dice the onion and the garlic into small cubes.
  8. 8. Heat one tablespoon of oil in a pan.
  9. 9. Sauté the onion and garlic cubes in the hot oil.
  10. 10. Squeeze the spinach firmly with your hands to remove excess liquid.
  11. 11. Chop the spinach roughly.
  12. 12. Add the chopped spinach to the onion mixture in the pan.
  13. 13. Sauté the spinach briefly.
  14. 14. Season the mixture with salt, pepper, and a pinch of nutmeg.
  15. 15. Wash the tomatoes.
  16. 16. Slice the tomatoes.
  17. 17. Slice the Brie cheese.
  18. 18. Cut the baguettes in half crosswise.
  19. 19. Slice the baguette halves lengthwise, but not all the way through, to open them up.
  20. 20. Fill the bottom halves of the baguettes with the spinach mixture.
  21. 21. Place the tomato slices on top of the spinach.
  22. 22. Place the Brie slices on top of the tomatoes.
  23. 23. Drizzle the remaining oil onto the cut surfaces of the top baguette halves.
  24. 24. Preheat the oven to 200 degrees Celsius.
  25. 25. Place the filled baguettes on a baking sheet.
  26. 26. Bake the baguettes in the preheated oven for about 6 minutes.
  27. 27. Place the top baguette halves onto the filled halves.
  28. 28. Finish baking the baguettes for another 2 minutes.
