🍽️ Oven Baguettes with Tomato, Spinach, and Brie

Ingredients
- 400 g spinach leaves
- 1 onion
- 1 garlic clove
- 3 tbsp olive oil
- salt
- pepper (from the mill)
- nutmeg
- 300 g tomatoes
- 300 g brie
- 2 baguettes (at 250 g)
Instructions
- 1. Wash the spinach thoroughly and remove any woody stems.
- 2. Bring a pot of salted water to a boil.
- 3. Add the wet spinach to the boiling water and let it wilt briefly (blanch).
- 4. Drain the spinach and rinse it with cold water to stop the cooking process.
- 5. Let the spinach drain well.
- 6. Peel the onion and the garlic.
- 7. Dice the onion and the garlic into small cubes.
- 8. Heat one tablespoon of oil in a pan.
- 9. Sauté the onion and garlic cubes in the hot oil.
- 10. Squeeze the spinach firmly with your hands to remove excess liquid.
- 11. Chop the spinach roughly.
- 12. Add the chopped spinach to the onion mixture in the pan.
- 13. Sauté the spinach briefly.
- 14. Season the mixture with salt, pepper, and a pinch of nutmeg.
- 15. Wash the tomatoes.
- 16. Slice the tomatoes.
- 17. Slice the Brie cheese.
- 18. Cut the baguettes in half crosswise.
- 19. Slice the baguette halves lengthwise, but not all the way through, to open them up.
- 20. Fill the bottom halves of the baguettes with the spinach mixture.
- 21. Place the tomato slices on top of the spinach.
- 22. Place the Brie slices on top of the tomatoes.
- 23. Drizzle the remaining oil onto the cut surfaces of the top baguette halves.
- 24. Preheat the oven to 200 degrees Celsius.
- 25. Place the filled baguettes on a baking sheet.
- 26. Bake the baguettes in the preheated oven for about 6 minutes.
- 27. Place the top baguette halves onto the filled halves.
- 28. Finish baking the baguettes for another 2 minutes.
