🍽️ Baked Goat Cheese with Tomato and Olive Mix

Ingredients
- 1 onion
- 1 garlic clove
- 4 tbsp black, pitted olives
- 2 sprigs oregano
- 6 tomatoes
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- salt
- pepper (from the mill)
- 4 slices goat cheese (approx. 100-120 g each)
- oregano (for garnish)
Instructions
- 1. Peel the onions from their papery skin and slice them into thin rings.
- 2. Peel the garlic cloves and chop them very finely.
- 3. Drain the olives in a colander.
- 4. Rinse the oregano briefly under running water, shake it dry, and chop the leaves finely.
- 5. Wash the tomatoes thoroughly.
- 6. Cut the tomatoes into quarters and remove the hard core.
- 7. Dice the cored tomato pieces into small cubes.
- 8. Combine the diced tomatoes with the olives, onion rings, chopped garlic, and oregano in a bowl.
- 9. Add the oil and vinegar to the vegetable mixture.
- 10. Season the mixture generously with salt and pepper to your taste.
- 11. Heat a pan with some oil over medium to high heat.
- 12. Fry the goat cheese slices until golden brown on both sides.
- 13. Remove the fried cheese slices from the pan.
- 14. Place the cheese slices on a plate.
- 15. Arrange the prepared tomato-olive mixture around the cheese.
- 16. Garnish the dish with a little fresh oregano.
- 17. Serve the dish hot together with fresh baguette.
