  1. 1. Peel the onions from their papery skin and slice them into thin rings.
  2. 2. Peel the garlic cloves and chop them very finely.
  3. 3. Drain the olives in a colander.
  4. 4. Rinse the oregano briefly under running water, shake it dry, and chop the leaves finely.
  5. 5. Wash the tomatoes thoroughly.
  6. 6. Cut the tomatoes into quarters and remove the hard core.
  7. 7. Dice the cored tomato pieces into small cubes.
  8. 8. Combine the diced tomatoes with the olives, onion rings, chopped garlic, and oregano in a bowl.
  9. 9. Add the oil and vinegar to the vegetable mixture.
  10. 10. Season the mixture generously with salt and pepper to your taste.
  11. 11. Heat a pan with some oil over medium to high heat.
  12. 12. Fry the goat cheese slices until golden brown on both sides.
  13. 13. Remove the fried cheese slices from the pan.
  14. 14. Place the cheese slices on a plate.
  15. 15. Arrange the prepared tomato-olive mixture around the cheese.
  16. 16. Garnish the dish with a little fresh oregano.
