🍽️ Baked Spinach with Egg

Ingredients
- 400 g spinach
- 1 onion
- 2 tbsp butter (and butter for the ramekins)
- 50 g crème fraîche
- 2 tbsp freshly grated parmesan
- salt
- nutmeg (freshly grated)
- 4 eggs
- 2 tomatoes
- 1 tbsp freshly chopped parsley
Instructions
- 1. Preheat the oven to 200 degrees Celsius using the top and bottom heat setting.
- 2. Rinse the spinach and remove any tough stems. Roughly chop the leaves.
- 3. Peel the onion and dice it into fine cubes.
- 4. Heat the butter in a pan. Add the onions and sauté for 1 to 2 minutes until soft and translucent.
- 5. Add the chopped spinach to the pan. Let it wilt and allow the liquid to evaporate.
- 6. Remove the pan from the heat. Stir in the crème fraîche and Parmesan cheese.
- 7. Season the mixture with salt and ground nutmeg.
- 8. Divide the spinach mixture among four small ovenproof ramekins.
- 9. Crack each egg and gently slide it onto the spinach in the ramekins.
- 10. Place the ramekins in the oven. Bake the dishes for about 10 minutes.
- 11. Wash the tomatoes under running water.
- 12. Cut the tomatoes into quarters. Remove the core.
- 13. Dice the cored tomato pieces into small cubes.
- 14. Remove the ramekins from the oven.
- 15. Garnish the dishes with the diced tomatoes and fresh parsley.
- 16. Serve the dishes immediately while warm.
