  1. 1. Preheat the oven to 160 degrees Celsius with top and bottom heat.
  2. 2. Peel the onions and the garlic.
  3. 3. Quarter the onions lengthwise.
  4. 4. Finely chop the garlic.
  5. 5. Wash the potatoes.
  6. 6. Quarter the potatoes as well.
  7. 7. Wash the herbs.
  8. 8. Shake the herbs dry.
  9. 9. Wash the octopus.
  10. 10. Pat the octopus dry with a kitchen towel.
  11. 11. Heat the oil in a casserole dish.
  12. 12. Sauté the garlic in it until translucent.
  13. 13. Add the potatoes, onions, and herbs to the garlic.
  14. 14. Sauté the vegetables briefly.
  15. 15. Deglaze the mixture with the wine.
  16. 16. Place the octopus on top of the vegetables.
  17. 17. Pour the stock over everything.
  18. 18. Season the ingredients with salt and pepper.
  19. 19. Place the dish in the preheated oven.
  20. 20. Braise the octopus for 50 to 60 minutes.
  21. 21. Baste the octopus with the liquid repeatedly during cooking.
  22. 22. Remove the cooked octopus from the oven.
  23. 23. Taste the dish and adjust the seasoning if needed.
  24. 24. Serve the dish.
