🍽️ Baked Octopus with Potatoes and Onions

Ingredients
- 3 red onions
- 2 garlic cloves
- 600 g waxy potatoes
- 1 sprig rosemary
- 2 sprigs thyme
- 600 g octopus (kitchen-ready,)
- 2 tbsp olive oil
- 250 ml dry white wine
- 150 ml fish stock
- 100 ml vegetable stock
- salt
- pepper (from the mill)
Instructions
- 1. Preheat the oven to 160 degrees Celsius with top and bottom heat.
- 2. Peel the onions and the garlic.
- 3. Quarter the onions lengthwise.
- 4. Finely chop the garlic.
- 5. Wash the potatoes.
- 6. Quarter the potatoes as well.
- 7. Wash the herbs.
- 8. Shake the herbs dry.
- 9. Wash the octopus.
- 10. Pat the octopus dry with a kitchen towel.
- 11. Heat the oil in a casserole dish.
- 12. Sauté the garlic in it until translucent.
- 13. Add the potatoes, onions, and herbs to the garlic.
- 14. Sauté the vegetables briefly.
- 15. Deglaze the mixture with the wine.
- 16. Place the octopus on top of the vegetables.
- 17. Pour the stock over everything.
- 18. Season the ingredients with salt and pepper.
- 19. Place the dish in the preheated oven.
- 20. Braise the octopus for 50 to 60 minutes.
- 21. Baste the octopus with the liquid repeatedly during cooking.
- 22. Remove the cooked octopus from the oven.
- 23. Taste the dish and adjust the seasoning if needed.
- 24. Serve the dish.
