🍽️ Baked Pike with Lemon Vegetables

Ingredients
- 1 Pike approx. 1,5 kg (ready for cooking)
- 500 g waxy potatoes
- 2 red onions
- 2 untreated lemons
- 2 chili peppers (yellow and red)
- sea salt
- white pepper
- 1 bunch parsley
- olive oil
Instructions
- 1. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
- 2. Rinse the pike under running water and pat it dry with a kitchen towel.
- 3. Peel the potatoes and cut them into bite-sized pieces.
- 4. Peel the onions and cut them into wedges.
- 5. Wash the lemons. Cut one half into wedges and set it aside.
- 6. Cut the other lemon half into quarters.
- 7. Wash the chili peppers. Cut them in half if you prefer, or leave them whole.
- 8. Season the fish inside and out with sea salt and pepper.
- 9. Drizzle the fish with the juice of the reserved lemon half.
- 10. Wash the parsley and shake off excess water.
- 11. Stuff the fish cavity with the parsley.
- 12. Place the fish on a baking sheet lined with baking paper.
- 13. Arrange the potatoes, onions, lemon quarters, and chili peppers around the fish.
- 14. Lightly salt the vegetables and drizzle them with olive oil.
- 15. Bake the dish in the oven for about 40 minutes.
