🍽️ Baked Chicory with Goat Cheese

Ingredients
- 6 chicory
- salt
- olive oil (for the dish and for drizzling)
- 2 sprigs sage
- 3 sprigs parsley
- 3 tbsp lemon juice
- sea salt
- pepper (from the mill)
- 1 pinch sugar
- 250 g goat cheese (log, e.g. Saint-Maure with ash)
- rosemary (for garnish)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the chicory thoroughly and cut it in half lengthwise.
- 3. Bring water to a boil, add salt, and cook the chicory halves for about 4 minutes (this is called blanching).
- 4. Remove the chicory from the water and rinse it immediately with cold water to stop the cooking process.
- 5. Let the chicory drain and place it in a lightly oiled baking dish with the cut side facing up.
- 6. Wash the herbs, shake them dry, and strip the leaves from the stems.
- 7. Finely chop the herbs and distribute them between the chicory leaves.
- 8. Drizzle the chicory with lemon juice and season it with salt, pepper, and sugar.
- 9. Slice the goat cheese and place the slices on top of the chicory.
- 10. Drizzle a splash of olive oil over everything.
- 11. Place the dish in the preheated oven and bake the chicory for 5 to 6 minutes until golden brown (gratinating).
- 12. Remove the chicory from the oven and serve it on pre-warmed plates.
