🍽️ Oven-Baked Zucchini Stuffed with Couscous

Ingredients
- 50 g couscous
- 1 kg colorful zucchini (4 pieces)
- 60 g olives (canned; pitted)
- 50 g sun-dried tomatoes
- 30 g red onion (1 small)
- 20 g parsley (1 bunch)
- 125 g mozzarella (1 ball)
- 20 g olive oil (2 tbsp)
- salt
- pepper
- lemon juice
- 30 g pine nuts (2 tbsp)
Instructions
- 1. Pour 200 milliliters of hot water over the couscous.
- 2. Let the couscous swell for five minutes.
- 3. Wash the zucchini thoroughly.
- 4. Cut off the tough ends of the zucchini.
- 5. Cut the zucchini in half lengthwise.
- 6. Carefully scoop out the soft inside of the zucchini with a spoon.
- 7. Chop the scooped-out zucchini flesh finely.
- 8. Chop the olives finely.
- 9. Chop the tomatoes finely.
- 10. Peel the onion.
- 11. Slice the onion into rings.
- 12. Wash the parsley.
- 13. Shake the parsley dry.
- 14. Pluck off the parsley leaves.
- 15. Chop the parsley leaves finely.
- 16. Set aside a small portion of the chopped parsley.
- 17. Cut the mozzarella into small cubes.
- 18. Mix the couscous with olive oil.
- 19. Have the prepared ingredients (zucchini flesh, olives, tomatoes, onions, mozzarella, parsley) ready.
- 20. Mix the couscous with the zucchini flesh.
- 21. Mix the couscous-zucchini mixture with the olives.
- 22. Mix the mass with the tomatoes.
- 23. Mix the mass with the onion rings.
- 24. Mix the mass with the mozzarella cubes.
- 25. Mix the mass with the chopped parsley.
- 26. Season the filling with salt.
- 27. Season the filling with pepper.
- 28. Season the filling with lemon juice.
- 29. Fill the couscous mixture into the hollowed-out zucchini halves.
- 30. Sprinkle pine nuts over the stuffed zucchini.
- 31. Line a baking sheet with baking paper.
- 32. Place the stuffed zucchini on the prepared baking sheet.
- 33. Preheat the oven to 220 degrees Celsius.
- 34. Bake the zucchini in the preheated oven for about 15 to 20 minutes.
- 35. Sprinkle the finished zucchini with the remaining parsley.
- 36. Serve the zucchini immediately.
