  1. 1. Carefully prick the 12 eggs on one side.
  2. 2. Blow out the contents of the eggs.
  3. 3. Use the empty yolk and egg white for another dish.
  4. 4. Use a small sharp knife or a screwdriver to make a hole at the blunt end of each shell.
  5. 5. The hole should be about the size of a 1 euro coin.
  6. 6. Rinse the empty shells thoroughly with very hot water.
  7. 7. Place the shells with the opening facing down on a clean kitchen towel.
  8. 8. Let the shells drain dry.
  9. 9. Cut 12 strips of aluminum foil.
  10. 10. Each strip should be 30 cm long and 14.5 cm wide.
  11. 11. Place an egg cup upside down in the center of an aluminum foil strip.
  12. 12. Push the foil tightly around the egg cup.
  13. 13. Carefully pull out the egg cup.
  14. 14. Repeat this process for all 12 strips.
  15. 15. This creates 12 small nests from aluminum foil.
  16. 16. Dip a small brush into the oil.
  17. 17. Grease the drained egg shells carefully from the inside.
  18. 18. Place the aluminum nests with the opening facing up side by side in a springform pan.
  19. 19. The springform pan should have a diameter of 28 cm.
  20. 20. Place the prepared egg shells with the opening facing up into the nests.
  21. 21. Rinse an orange thoroughly with hot water.
  22. 22. Dry the orange.
  23. 23. Finely grate the peel of the orange.
  24. 24. Use the rest of the orange for another dish.
  25. 25. Halve the half vanilla pod lengthwise.
  26. 26. Scrape out the vanilla pod pulp with a small sharp knife.
  27. 27. Mix flour, whole wheat flour, and baking powder in a bowl.
  28. 28. Place the remaining egg in a mixing bowl.
  29. 29. Beat the egg until creamy with the beaters of a hand mixer.
  30. 30. Add 1 pinch of salt, sugar, rapeseed oil, and buttermilk.
  31. 31. Mix everything until smooth.
  32. 32. Add the flour mix.
  33. 33. Fold in the flour mix quickly.
  34. 34. The batter should be slightly moist.
  35. 35. If necessary, mix in an additional 1-2 tablespoons of buttermilk.

  37. 37. Mix almonds and vanilla pulp into one half.
  38. 38. Mix 1 heaped teaspoon of orange peel and chocolate chips into the second half.

  40. 40. Use the largest nozzle for the piping bags.
  41. 41. Pipe the batter into 6 egg shells.
  42. 42. Repeat this for the other half of the batter.
  43. 43. Fill the shells only about halfway.
  44. 44. Preheat the oven.
  45. 45. Bake the surprise eggs at 180 °C (convection 160 °C, gas: level 2-3).
  46. 46. Bake them for 25 minutes.
  47. 47. Do a doneness test after 25 minutes.
  48. 48. Carefully insert a wooden skewer into the batter.
  49. 49. If the skewer comes out clean, the eggs are done.
  50. 50. Extend the baking time by about 5 minutes if necessary.
  51. 51. Remove the finished eggs from the oven.
  52. 52. Let them cool on a cake rack.
  53. 53. Gently tap the egg shells with a knife before serving.
  54. 54. Remove the egg shells.
