Ingredients
- 800 g squid ring
- 150 g flour
- 250 ml white wine
- 2 eggs
- salt
- pepper (from the mill)
- oil (for frying)
- chopped parsley (for sprinkling)
- lemon zest
Instructions
- 1. Rinse the squid rings thoroughly.
- 2. Pat the rings dry with a kitchen towel.
- 3. Separate the eggs: Carefully remove the yolk from the egg white.
- 4. Whisk the flour with the white wine until smooth.
- 5. Stir the egg yolk, a pinch of salt, and pepper into the flour mixture.
- 6. Beat the egg white until stiff peaks form.
- 7. Gently fold the beaten egg white into the batter.
- 8. Ensure the batter has a thick, creamy consistency.
- 9. Dip the squid rings completely into the batter.
- 10. Heat oil in a pan or pot.
- 11. Fry the breaded rings in batches in the hot oil.
- 12. Cook the rings for about 2 minutes until golden brown.
- 13. Place the finished rings on kitchen paper to absorb excess oil.
- 14. Sprinkle the squid rings with fresh parsley.
- 15. Serve the rings with lemon wedges on the side.
