🍽️ Crispy Meat-Filled Yeast Rolls

Ingredients
- 500 g double-milled flour (e.g. Wiener Griessler)
- 40 g yeast
- 250 ml water
- salt
- 1 tsp sugar
- 1 shallot (finely chopped)
- 1 clove garlic (finely chopped)
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 500 g minced meat
- 100 ml meat broth
- 1 tsp thyme (dried)
- salt
- pepper (from the mill)
- 2 egg yolks
- flour (for working)
Instructions
- 1. Pour the flour onto a clean work surface.
- 2. Make a well in the center of the flour.
- 3. Crumble the yeast into the well.
- 4. Add the sugar directly to the yeast.
- 5. Sprinkle the salt over the remaining flour.
- 6. Pour some of the warm water onto the yeast.
- 7. Stir the yeast in the water until it has dissolved.
- 8. Add the remaining water.
- 9. Knead everything into a smooth yeast dough.
- 10. Ensure the dough is smooth and elastic.
- 11. If necessary, add a little more warm water.
- 12. Cover the dough.
- 13. Let the dough rise in a warm place for about 1 hour.
- 14. Heat oil in a pan.
- 15. Fry the minced meat until crumbly.
- 16. Add the chopped shallot to the pan.
- 17. Add the thyme leaves.
- 18. Add the chopped garlic.
- 19. Sauté the vegetables briefly with the meat.
- 20. Stir the tomato paste into the meat mixture.
- 21. Deglaze the mixture with the meat broth.
- 22. Let the filling simmer for about 10 minutes.
- 23. Wait until almost all the liquid has evaporated.
- 24. Season the filling generously with salt and pepper.
- 25. Remove the pan from the heat.
- 26. Let the filling cool down slightly.
- 27. Knead the dough briefly again.
- 28. Flour your work surface.
- 29. Roll out the dough into a rectangle.
- 30. The rectangle should be about 2 millimeters thick.
- 31. The dimensions should be approximately 15 by 80 centimeters.
- 32. Distribute the cooled meat filling evenly over the dough.
- 33. Roll the dough up tightly lengthwise.
- 34. Brush the ends with egg yolk.
- 35. Press the ends down slightly.
- 36. Cut the roll into about 20 equal pieces.
- 37. Press the ends of each piece together slightly.
- 38. Brush the rolls with egg yolk.
- 39. Place the rolls on a baking sheet lined with baking paper.
- 40. Preheat the oven.
- 41. Set the oven to 200 degrees Celsius fan-assisted.
- 42. Bake the rolls for about 20 minutes.
- 43. The rolls should be golden brown.
- 44. Let the rolls cool down briefly.
- 45. Serve the rolls warm.
