🍽️ Oven-roasted Sweet Potato Fries with Feta and Toasted Seeds

Ingredients
- 1 kg sweet potatoes
- 4 garlic cloves
- 3 chili peppers
- 200 g feta cheese (9 % fat)
- 2 tbsp olive oil
- 1 tbsp honey
- 30 g pumpkin seeds (2 tbsp)
- 30 g sunflower seeds (2 tbsp)
- 15 g sesame seeds (1 tbsp)
- coarse sea salt
Instructions
- 1. Peel the sweet potatoes and wash them thoroughly.
- 2. Cut the sweet potatoes into finger-thick sticks.
- 3. Peel the garlic cloves and slice them thinly.
- 4. Halve the chili peppers lengthwise and remove the seeds and inner membrane.
- 5. Wash the deseeded chili peppers and chop them finely or slice them into small rings.
- 6. Cut the feta cheese into small cubes.
- 7. Place the sweet potato sticks, feta cheese, garlic, chili, olive oil, and honey into a large bowl.
- 8. Toss all ingredients well until they are evenly coated.
- 9. Line a baking tray with baking paper.
- 10. Spread the vegetable mixture evenly on the prepared tray.
- 11. Preheat the oven to 180 °C (160 °C with fan or gas mark 2–3).
- 12. Place the tray in the oven and bake the sweet potatoes for about 20 to 25 minutes.
- 13. Place the pumpkin seeds, sunflower seeds, and sesame seeds into a dry frying pan.
- 14. Toast the seeds and sesame over medium heat without oil until fragrant.
- 15. Remove the sweet potatoes from the oven after the baking time.
- 16. Arrange the warm sweet potatoes on the plates.
- 17. Sprinkle sea salt, the toasted seeds, and sesame over the dish.
