  1. 1. Peel the sweet potatoes and wash them thoroughly.
  2. 2. Cut the sweet potatoes into finger-thick sticks.
  3. 3. Peel the garlic cloves and slice them thinly.
  4. 4. Halve the chili peppers lengthwise and remove the seeds and inner membrane.
  5. 5. Wash the deseeded chili peppers and chop them finely or slice them into small rings.
  6. 6. Cut the feta cheese into small cubes.
  7. 7. Place the sweet potato sticks, feta cheese, garlic, chili, olive oil, and honey into a large bowl.
  8. 8. Toss all ingredients well until they are evenly coated.
  9. 9. Line a baking tray with baking paper.
  10. 10. Spread the vegetable mixture evenly on the prepared tray.
  11. 11. Preheat the oven to 180 °C (160 °C with fan or gas mark 2–3).
  12. 12. Place the tray in the oven and bake the sweet potatoes for about 20 to 25 minutes.
  13. 13. Place the pumpkin seeds, sunflower seeds, and sesame seeds into a dry frying pan.
  14. 14. Toast the seeds and sesame over medium heat without oil until fragrant.
  15. 15. Remove the sweet potatoes from the oven after the baking time.
  16. 16. Arrange the warm sweet potatoes on the plates.
  17. 17. Sprinkle sea salt, the toasted seeds, and sesame over the dish.
