  1. 1. Peel the garlic clove and the onion.
  2. 2. Dice the garlic and onion very finely.
  3. 3. Wash the spinach thoroughly in a colander.
  4. 4. Let the washed spinach drain briefly.
  5. 5. Heat the rapeseed oil in a pot.
  6. 6. Sauté the onions and garlic until translucent over medium heat.
  7. 7. Add the moist spinach to the vegetables.
  8. 8. Stir the spinach until it wilts.
  9. 9. Grate some fresh nutmeg into the mixture.
  10. 10. Season the spinach with salt and pepper.
  11. 11. Transfer the spinach to a bowl.
  12. 12. Let the spinach cool down briefly.
  13. 13. Divide the spinach into four equal portions.
  14. 14. Squeeze each portion well with your hands.
  15. 15. Shape the portions into firm balls.
  16. 16. Line a baking tray with baking paper.
  17. 17. Place the spinach balls on the tray.
  18. 18. Press the balls down slightly to flatten them.
  19. 19. Press a well into the center of each ball.
  20. 20. Crack the eggs one by one into a small bowl.
  21. 21. Slide one egg into each spinach well.
  22. 22. Preheat the oven to 200 °C (convection 180 °C, gas mark 3).
  23. 23. Place the tray on the second rack from the bottom.
  24. 24. Bake the nests for 15 to 20 minutes.
  25. 25. Season the finished nests with salt and pepper.
