🍽️ Baked Spinach Nests with Egg

Ingredients
- 1 garlic clove
- 1 onion
- 1 kg fresh leaf spinach
- 2 tbsp rapeseed oil
- nutmeg
- salt
- pepper
- 4 eggs
Instructions
- 1. Peel the garlic clove and the onion.
- 2. Dice the garlic and onion very finely.
- 3. Wash the spinach thoroughly in a colander.
- 4. Let the washed spinach drain briefly.
- 5. Heat the rapeseed oil in a pot.
- 6. Sauté the onions and garlic until translucent over medium heat.
- 7. Add the moist spinach to the vegetables.
- 8. Stir the spinach until it wilts.
- 9. Grate some fresh nutmeg into the mixture.
- 10. Season the spinach with salt and pepper.
- 11. Transfer the spinach to a bowl.
- 12. Let the spinach cool down briefly.
- 13. Divide the spinach into four equal portions.
- 14. Squeeze each portion well with your hands.
- 15. Shape the portions into firm balls.
- 16. Line a baking tray with baking paper.
- 17. Place the spinach balls on the tray.
- 18. Press the balls down slightly to flatten them.
- 19. Press a well into the center of each ball.
- 20. Crack the eggs one by one into a small bowl.
- 21. Slide one egg into each spinach well.
- 22. Preheat the oven to 200 °C (convection 180 °C, gas mark 3).
- 23. Place the tray on the second rack from the bottom.
- 24. Bake the nests for 15 to 20 minutes.
- 25. Season the finished nests with salt and pepper.
