🍽️ Crispy Baked Potato Dumplings

Ingredients
- 500 g starchy potatoes
- 75 g flour
- salt
- pepper
- 1 egg
- 3 tbsp oil
- 100 g breakfast bacon
- 300 g sour cream
- 2 eggs
- 3 tbsp chopped parsley
- salt
- 2 garlic cloves
- butter (for the baking dish)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in salted water and boil them for about 25 minutes until tender.
- 3. Drain the water and let the potatoes cool down completely.
- 4. Press the cooled potatoes through a potato ricer.
- 5. Add flour, one egg, a pinch of salt, and pepper to the potatoes.
- 6. Mix everything into a dough and let it rest briefly.
- 7. Shape the dough into finger-long dumplings, about 8 centimeters in length.
- 8. Bring plenty of salted water to a boil.
- 9. Boil the dumplings in the water for about 5 minutes.
- 10. Remove the dumplings with a slotted spoon.
- 11. Let them drain briefly.
- 12. Fry the dumplings in hot oil until golden brown.
- 13. Grease a baking dish with butter.
- 14. Place the fried dumplings into the dish.
- 15. Whisk sour cream, eggs, and salt in a bowl.
- 16. Add chopped parsley and pressed garlic to the sauce.
- 17. Pour the sauce evenly over the dumplings.
- 18. Cut the bacon into small cubes.
- 19. Fry the bacon until crispy in a pan.
- 20. Sprinkle the crispy bacon over the dumplings.
- 21. Preheat the oven to 200 degrees Celsius.
- 22. Bake the dumplings in the oven for about 15 to 20 minutes.
- 23. Serve the dish with green salad and a cold beer.
