🍽️ Baked Red Mullet in Parchment Packets

Ingredients
- 4 Red Mullet (kitchen-ready)
- Salt
- Pepper (from the mill)
- 2 tbsp Lemon juice
- 2 unpeeled Lemons
- 4 tbsp black, pitted Olives
- 4 tbsp Olive oil
- 1 Ciabatta
- Lemon wedges (for serving)
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Thoroughly wash the red mullet and pat them dry with a kitchen towel.
- 3. Season the fish inside and out with salt and pepper.
- 4. Drizzle the fish with some lemon juice.
- 5. Rinse a lemon under hot water.
- 6. Slice the lemon into very thin slices.
- 7. Place the lemon slices inside the belly cavity of each fish.
- 8. Slice the olives into thick rounds.
- 9. Place a portion of olive slices on a piece of parchment paper.
- 10. Place one fish on top of the olives.
- 11. Drizzle some olive oil over the fish.
- 12. Seal the parchment paper tightly around the fish to form a packet.
- 13. Repeat this for all the fish.
- 14. Place the packets in the preheated oven.
- 15. Bake the fish for 25 to 30 minutes.
- 16. Remove the packets from the oven.
- 17. Carefully open the packets.
- 18. Switch the oven to the grill function.
- 19. Briefly brown the fish under the hot grill.
- 20. Serve the fish with fresh ciabatta bread and lemon wedges.
