  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Thoroughly wash the red mullet and pat them dry with a kitchen towel.
  3. 3. Season the fish inside and out with salt and pepper.
  4. 4. Drizzle the fish with some lemon juice.
  5. 5. Rinse a lemon under hot water.
  6. 6. Slice the lemon into very thin slices.
  7. 7. Place the lemon slices inside the belly cavity of each fish.
  8. 8. Slice the olives into thick rounds.
  9. 9. Place a portion of olive slices on a piece of parchment paper.
  10. 10. Place one fish on top of the olives.
  11. 11. Drizzle some olive oil over the fish.
  12. 12. Seal the parchment paper tightly around the fish to form a packet.
  13. 13. Repeat this for all the fish.
  14. 14. Place the packets in the preheated oven.
  15. 15. Bake the fish for 25 to 30 minutes.
  16. 16. Remove the packets from the oven.
  17. 17. Carefully open the packets.
  18. 18. Switch the oven to the grill function.
  19. 19. Briefly brown the fish under the hot grill.
  20. 20. Serve the fish with fresh ciabatta bread and lemon wedges.
