🍽️ Crispy Rice Balls with Cheese Filling

Ingredients
- 150 g Mozzarella
- 50 g Parmesan
- 300 g Arborio rice
- 2 Eggs
- 2 tbsp Butter
- 4 tbsp Breadcrumbs
- 2 tbsp Flour
- Salt
- Pepper (from the mill)
- Ghee or Oil (for frying)
- Bay leaf (for garnish)
Instructions
- 1. Bring 500 milliliters of salted water to a boil in a pot.
- 2. Add the rice to the boiling water.
- 3. Let the rice simmer on low heat.
- 4. Stir frequently to allow the rice to swell.
- 5. Stir the Parmesan into the rice at the end.
- 6. Let the rice mixture cool down slightly.
- 7. Mix 2 tablespoons of butter and 1 egg into the cooled rice.
- 8. Beat 1 egg in a deep plate.
- 9. Season the egg with a little salt and pepper.
- 10. Cut the cheese into small cubes.
- 11. Take about 10 portions of rice the size of a tangerine.
- 12. Shape each portion into a ball.
- 13. Press a indentation into the center of each ball with your finger.
- 14. Fill about 1 tablespoon of cheese into the indentation.
- 15. Close the opening with rice.
- 16. Roll the balls in flour.
- 17. Then coat the balls in the egg mixture.
- 18. Finally, roll the balls in breadcrumbs.
- 19. Place the finished balls carefully on a cloth.
- 20. Heat ghee or oil in a deep pot.
- 21. Fry the rice balls in batches.
- 22. Let the finished balls drain on kitchen paper.
- 23. Serve the balls, for example, with a tomato salad.
