  1. 1. Peel the quinces.
  2. 2. Cut the quinces in half.
  3. 3. Remove the core.
  4. 4. Add lemon juice to 1.5 liters of water.
  5. 5. Bring the water to a boil.
  6. 6. Add the quinces to the boiling water for 1 minute.
  7. 7. Remove the quinces from the water.
  8. 8. Let the quinces drain.
  9. 9. Grease a heatproof bowl with butter.
  10. 10. Slice four quince halves into thin slices.
  11. 11. Place the slices in the bowl.
  12. 12. Arrange the remaining four quince halves over the slices.
  13. 13. Brush the quinces with grape juice.
  14. 14. Brush the quinces with currant jam.
  15. 15. Preheat the oven to 200 °C.
  16. 16. Place the bowl in the oven.
  17. 17. Bake the quinces for about 15 minutes.
  18. 18. Chop the pistachios.
  19. 19. Sprinkle the pistachios over the quinces.
  20. 20. Bake the quinces for another 6 to 8 minutes.
  21. 21. Serve the quinces warm.
