🍽️ Roasted Peppers with Goat Cheese

Ingredients
- 3 red bell peppers
- 3 yellow bell peppers
- 3 onions
- 4 sprigs thyme
- 3 tbsp olive oil
- 4 tbsp white balsamic vinegar
- salt
- pepper
- 400 g sheep's cheese (feta)
Instructions
- 1. Wash the peppers thoroughly under running water.
- 2. Remove the seeds and inner membranes, then slice the peppers into thin strips.
- 3. Peel the onions and cut them into wedges.
- 4. Wash the thyme sprigs and shake off excess water.
- 5. Roughly chop the thyme leaves.
- 6. Set aside a small handful of thyme for garnish later.
- 7. Toss the pepper and onion pieces with two tablespoons of oil, vinegar, salt, and pepper.
- 8. Place the seasoned vegetables into a baking dish.
- 9. Preheat the oven to 200 degrees (180 degrees for convection or gas levels 2 to 3).
- 10. Roast the vegetables in the preheated oven for about ten minutes.
- 11. Meanwhile, cut the goat cheese into pieces about two centimeters thick.
- 12. Place the cheese pieces on top of the partially cooked vegetables.
- 13. Drizzle the remaining oil over the cheese and vegetables.
- 14. Season with a little more pepper.
- 15. Bake the dish for another ten minutes.
- 16. Remove the baking dish from the oven.
- 17. Sprinkle the finished peppers with the reserved thyme.
- 18. Serve the dish immediately.
