🍽️ Crispy Baked Potatoes with Spicy Tomato Sauce (Patatas Bravas)

Ingredients
- 800 g mostly waxy potatoes
- salt
- 6 tomatoes
- 1 onion
- 1 clove of garlic
- 2 tbsp olive oil
- 1 tbsp tomato paste
- Tabasco
- brown sugar
- 1 tbsp freshly chopped parsley
- oil (for frying)
Instructions
- 1. Peel the potatoes.
- 2. Cut the potatoes into small cubes.
- 3. Bring water to a boil and add some salt.
- 4. Boil the potato cubes for about 5 minutes.
- 5. Immediately drain the hot water and rinse the potatoes with cold water to stop the cooking process.
- 6. Let the potatoes drain well in a colander.
- 7. Pour boiling water over the tomatoes.
- 8. Immediately shock the tomatoes with cold water.
- 9. Peel the skin off the tomatoes.
- 10. Cut the tomatoes into quarters.
- 11. Remove the seeds from the tomatoes.
- 12. Dice the tomatoes into small cubes.
- 13. Peel the onion.
- 14. Peel the garlic clove.
- 15. Dice the onion finely.
- 16. Dice the garlic finely.
- 17. Heat oil in a pan.
- 18. Sauté the onion and garlic in the hot oil for about 2 minutes.
- 19. Stir the diced tomatoes into the onion mixture.
- 20. Let the sauce simmer for about 5 minutes.
- 21. Add Tabasco sauce.
- 22. Season the sauce with salt.
- 23. Add a little sugar to balance the acidity.
- 24. Pat the potatoes dry if they are still moist.
- 25. Heat oil in a pan or pot.
- 26. Fry the potatoes in the hot oil for about 5 minutes.
- 27. Cook the potatoes until they are golden brown and crispy.
- 28. Pour the tomato sauce over the finished potatoes.
- 29. Sprinkle the dish with chopped parsley.
- 30. Serve the Patatas Bravas immediately.
