  2. 2. Cut the potatoes into small cubes.
  3. 3. Bring water to a boil and add some salt.
  4. 4. Boil the potato cubes for about 5 minutes.
  5. 5. Immediately drain the hot water and rinse the potatoes with cold water to stop the cooking process.
  6. 6. Let the potatoes drain well in a colander.
  7. 7. Pour boiling water over the tomatoes.
  8. 8. Immediately shock the tomatoes with cold water.
  9. 9. Peel the skin off the tomatoes.
  10. 10. Cut the tomatoes into quarters.
  11. 11. Remove the seeds from the tomatoes.
  12. 12. Dice the tomatoes into small cubes.
  13. 13. Peel the onion.
  14. 14. Peel the garlic clove.
  15. 15. Dice the onion finely.
  16. 16. Dice the garlic finely.
  17. 17. Heat oil in a pan.
  18. 18. Sauté the onion and garlic in the hot oil for about 2 minutes.
  19. 19. Stir the diced tomatoes into the onion mixture.
  20. 20. Let the sauce simmer for about 5 minutes.
  21. 21. Add Tabasco sauce.
  22. 22. Season the sauce with salt.
  23. 23. Add a little sugar to balance the acidity.
  24. 24. Pat the potatoes dry if they are still moist.
  25. 25. Heat oil in a pan or pot.
  26. 26. Fry the potatoes in the hot oil for about 5 minutes.
  27. 27. Cook the potatoes until they are golden brown and crispy.
  28. 28. Pour the tomato sauce over the finished potatoes.
  29. 29. Sprinkle the dish with chopped parsley.
  30. 30. Serve the Patatas Bravas immediately.
