  1. 1. Separate the eggs. Set the yolks aside for another use. Melt 30 grams of butter and let it cool. Whisk the cooled butter into the egg whites in a small bowl. Mix sugar and cinnamon in a separate dish.
  2. 2. Cut the puff pastry sheets in half to create six large rectangles (approx. 15 x 40 cm each). Place two rectangles side by side. Brush them thinly with the egg white and butter mixture.
  3. 3. Sprinkle some of the cinnamon-sugar mixture on top. Place another pastry sheet on top. Brush this layer with the egg white mixture as well. Sprinkle with more cinnamon sugar. Place a third pastry sheet on top.
  4. 4. Brush the top pastry layer with the remaining egg white mixture. Sprinkle it with the rest of the cinnamon sugar.
  5. 5. Cut each large pastry package into four smaller rectangles (approx. 15 x 10 cm each). Line a baking sheet with baking paper. Place the pastry pieces on it.
  6. 6. Preheat the oven. Bake the pastry pieces at 200 °C conventional heat (or 180 °C fan, gas mark 3-4) on the middle rack until golden brown. Remove them and let them cool on a wire rack.
  7. 7. Grease a baking dish with the remaining butter. Peel the bananas and place them in the dish. Squeeze the lime and measure out 2 tablespoons of juice.
  8. 8. Grate some nutmeg into the lime juice mixture. Stir in the honey. Toss the bananas in the mixture to coat them well. Bake them in the preheated oven (200 °C conventional heat, 180 °C fan, gas mark 3-4) for 12 minutes. Turn the bananas once halfway through baking.
  9. 9. Shave the chocolate into fine curls using a vegetable peeler.
  10. 10. Place one cooled pastry sheet on each of four plates. Place a baked banana on top. Drizzle 1 tablespoon of yogurt over each. Sprinkle with the chocolate shavings. Cover the banana with another pastry sheet and serve immediately.
