  1. 1. Whisk the flour with about 175 milliliters of cold water, turmeric, and the egg yolk until you have a smooth batter.
  2. 2. Fold in the chopped coriander and a pinch of salt.
  3. 3. Cover the bowl and refrigerate for about 30 minutes.
  4. 4. Rinse the prawns and pat them dry with kitchen paper.
  5. 5. Wash the rocket, remove any damaged leaves, and let it drain well.
  6. 6. Arrange the rocket decoratively on the plates and place lemon slices on top.
  7. 7. Dip each prawn completely into the prepared batter.
  8. 8. Fry the breaded prawns in hot oil for about 2 minutes until golden brown.
  9. 9. Place the finished prawns on kitchen paper to absorb excess oil.
  10. 10. Thread the prawns onto wooden skewers if you like.
  11. 11. Place the skewers on the bed of rocket.
  12. 12. Drizzle the skewers with chili sauce to taste and serve.
