🍽️ Crispy Prawn Skewers with Rocket

Ingredients
- 120 g rice flour
- 1 tsp turmeric
- 1 egg yolk
- 1 tsp freshly chopped cilantro leaves
- sea salt
- 16 shrimp (peeled and deveined, tail segment left on)
- a handful of arugula
- lemon slice (for garnish)
- oil (for frying)
- chili sauce (to taste)
Instructions
- 1. Whisk the flour with about 175 milliliters of cold water, turmeric, and the egg yolk until you have a smooth batter.
- 2. Fold in the chopped coriander and a pinch of salt.
- 3. Cover the bowl and refrigerate for about 30 minutes.
- 4. Rinse the prawns and pat them dry with kitchen paper.
- 5. Wash the rocket, remove any damaged leaves, and let it drain well.
- 6. Arrange the rocket decoratively on the plates and place lemon slices on top.
- 7. Dip each prawn completely into the prepared batter.
- 8. Fry the breaded prawns in hot oil for about 2 minutes until golden brown.
- 9. Place the finished prawns on kitchen paper to absorb excess oil.
- 10. Thread the prawns onto wooden skewers if you like.
- 11. Place the skewers on the bed of rocket.
- 12. Drizzle the skewers with chili sauce to taste and serve.
