🍽️ Oven-Baked Sea Bream with Herbs and Vegetables

Ingredients
- 1 Gold Bream (approx. 800 g)
- 1 bulb fennel
- 500 g small potatoes (floury-cooking)
- 500 g cherry tomatoes
- 1 rosemary sprig
- salt
- pepper (freshly ground)
- 6 garlic cloves
- 150 ml white wine
- 100 g olives
- olive oil (extra virgin)
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Rub the sea bream (dorade) inside and out generously with salt and pepper.
- 3. Stuff one sprig of rosemary and two crushed, unpeeled garlic cloves into the fish cavity.
- 4. Grease a baking dish with one to two tablespoons of oil.
- 5. Place the prepared fish into the greased dish.
- 6. Wash the cherry tomatoes thoroughly.
- 7. Arrange the washed tomatoes and olives around the fish in the dish.
- 8. Wash the potatoes thoroughly.
- 9. Place the unpeeled potatoes around the fish in the dish as well.
- 10. Place additional rosemary sprigs on top of the fish and vegetables.
- 11. Clean the fennel and wash it.
- 12. Cut the fennel into quarters.
- 13. Add the fennel pieces to the fish in the dish.
- 14. Pour the wine over everything.
- 15. Season the liquid once more with salt and pepper.
- 16. Place the baking dish into the preheated oven.
- 17. Bake the fish for about 25 to 30 minutes.
- 18. Remove the fish from the oven and serve immediately.
