  1. 1. Pluck the needles off the rosemary sprigs.
  2. 2. Finely chop the rosemary needles.
  3. 3. Rinse the lemon under hot water.
  4. 4. Finely grate the lemon zest.
  5. 5. Squeeze the lemon.
  6. 6. Set aside the lemon juice for later.
  7. 7. Mix the rosemary with the lemon zest and the olive oil.
  8. 8. Clean the mushrooms.
  9. 9. Slice the mushrooms thinly.
  10. 10. Place the mushroom slices in a baking dish.
  11. 11. Drizzle half of the seasoned oil over the mushrooms.
  12. 12. Season the mushrooms with salt and pepper.
  13. 13. Preheat the oven to 200 degrees Celsius.
  14. 14. Bake the mushrooms for about 10 minutes.
  15. 15. Grate the Parmesan cheese finely.
  16. 16. Sprinkle the Parmesan over the mushrooms.
  17. 17. Return the baking dish to the oven.
  18. 18. Bake the mushrooms for another 5 minutes.
  19. 19. Remove the baking dish from the oven.
  20. 20. Drizzle the remaining seasoned oil over the mushrooms.
  21. 21. Add a little lemon juice.
  22. 22. Serve the mushrooms immediately.
