  1. 1. Clean the cauliflower and cut it into four thick slices about 2 to 3 centimeters thick. Use the rest for another meal. Place the slices on a baking sheet lined with baking paper, brush them with one tablespoon of olive oil, and season with salt.
  2. 2. Roughly chop the nuts and mix them with four tablespoons of maple syrup, breadcrumbs, salt, pepper, and rosemary. Distribute this mixture evenly over the cauliflower steaks as a crust.
  3. 3. Preheat the oven to 200 degrees (180 degrees with fan or gas level 3). Bake the steaks for about 20 minutes until they are cooked through and lightly browned.
  4. 4. Meanwhile, wash the parsley, shake it dry, and chop it finely. Peel the onion and dice it finely. Mix both with lemon juice, the remaining maple syrup, the leftover olive oil, salt, and pepper. Remove the baked steaks from the oven and serve them with the parsley salad.
