  1. 1. Wash the bananas with the peel on and pat them dry. Place them directly on the rack of a preheated oven. Bake them at 200 degrees Celsius (or 180 degrees Celsius fan/air circulation, or gas mark 3) for about 10 minutes, until the peel turns black all over.
  2. 2. Slice the vanilla pod lengthwise and scrape out the tiny seeds with a knife. Stir the skyr (a thick yogurt) until smooth with the vanilla seeds and the flaxseed oil. Toast the almonds in a hot pan without oil over medium heat for 3 minutes.
  3. 3. Take the bananas out of the oven. Carefully peel off the top half of the hot peel. Divide the skyr among four plates and place the bananas on top. Drizzle with maple syrup and sprinkle with the toasted almonds.
