🍽️ Refreshing Watermelon Gazpacho with Sour Cream and Lime

Ingredients
- 2 slices white bread
- 1 yellow bell pepper
- 0.5 cucumber
- 4 tomatoes
- 200 ml tomato juice
- 1 onion
- 1 clove garlic
- 200 g watermelon
- 2 tbsp lime juice
- 1 pinch paprika powder
- 2 tbsp olive oil
- salt
- cane sugar
- pepper (from the mill)
- 2 tbsp sour cream
- lime zest
Instructions
- 1. Remove the hard crust from the white bread.
- 2. Soak the crustless bread in 4 to 5 tablespoons of lukewarm water.
- 3. Thoroughly wash the bell pepper.
- 4. Remove the stem and seeds from the bell pepper.
- 5. Cut the deseeded bell pepper in half lengthwise.
- 6. Remove the white inner membranes from the bell pepper.
- 7. Peel the cucumber completely.
- 8. Bring salted water to a boil.
- 9. Briefly place the tomatoes in the boiling salted water.
- 10. Remove the tomatoes immediately and place them in ice water.
- 11. Peel the cooled tomatoes.
- 12. Cut the peeled tomatoes into quarters.
- 13. Remove the seeds from the tomato quarters.
- 14. Press the tomato flesh through a fine sieve.
- 15. Collect the drained tomato juice.
- 16. Add the collected juice to the remaining tomato juice.
- 17. Peel the onion.
- 18. Peel the garlic clove.
- 19. Finely dice the onion.
- 20. Finely dice the garlic.
- 21. Cut the watermelon into small cubes.
- 22. Dice the bell pepper finely.
- 23. Dice the peeled cucumber finely.
- 24. Take about 2 tablespoons of the diced watermelon and set it aside for garnish.
- 25. Squeeze the soaked white bread well.
- 26. Add the tomato pieces to the blender.
- 27. Add the tomato juice to the blender.
- 28. Add the squeezed white bread to the blender.
- 29. Add the lime juice to the blender.
- 30. Add the diced bell pepper to the blender.
- 31. Add the olive oil to the blender.
- 32. Add the diced cucumber to the blender.
- 33. Add the diced onion to the blender.
- 34. Add the diced garlic to the blender.
- 35. Blend all ingredients until smooth.
