🍽️ Creamy Prawn Soup with Green Asparagus

Ingredients
- 400 g green asparagus
- 1 tbsp oil
- 1 onion
- 1 clove garlic
- 6 shrimp (kitchen-ready, deveined and peeled except for tail segment)
- 500 ml vegetable broth
- 1 tsp cornstarch
- 1 egg
- salt
- pepper (from mill)
- soy sauce
- chive rings (for garnish)
Instructions
- 1. Peel the bottom third of the asparagus stalks.
- 2. Halve the peeled asparagus pieces lengthwise.
- 3. Peel the onion and the garlic.
- 4. Finely chop the onion and the garlic.
- 5. Heat some oil in a large pan or pot.
- 6. Add the chopped onion, garlic, and asparagus to the hot oil.
- 7. Sauté the vegetables over medium heat for about 5 to 6 minutes, stirring constantly, until soft.
- 8. Add the prawns (shrimp) to the pan.
- 9. Fry the prawns briefly together with the vegetables.
- 10. Dust everything with cornstarch (corn flour).
- 11. Deglaze the dish with the broth.
- 12. Bring the soup to a boil.
- 13. Let the soup simmer for about 1 to 2 minutes until the prawns are cooked through.
- 14. Whisk the egg in a small bowl until creamy.
- 15. Slowly stir the whisked egg into the hot soup.
- 16. Season the soup to taste with salt, pepper, and soy sauce.
- 17. Divide the hot soup among pre-warmed plates.
- 18. Sprinkle the soup with fresh chives.
- 19. Serve the soup immediately.
