🍽️ Spicy Grilled Shrimp Skewers with Homemade Aioli

Ingredients
- 3 garlic cloves
- 1 red chili pepper
- 3 egg yolks
- 1 tsp hot mustard
- 1 tsp ketchup
- salt
- pepper (from the mill)
- 150 ml olive oil
- 0.5 tbsp lemon juice
- sweet and sour chili sauce (for garnishing)
- 16 large prawns (kitchen ready)

Instructions
- 1. Let all the ingredients for the aioli sit on the counter until they reach room temperature.
- 2. Peel the garlic cloves and press them through a garlic press.
- 3. Wash the chili peppers, cut them in half lengthwise, remove the seeds, and finely chop the flesh.
- 4. Add the egg yolks, mustard, ketchup, a pinch of salt, and pepper to a large bowl.
- 5. Whisk the mixture with a whisk or mixer until it becomes white and creamy.
- 6. Add the oil drop by drop at first, and then slowly in a thin stream while continuing to whisk constantly.
- 7. Always wait until the previous oil is fully incorporated before adding the next bit.
- 8. Season the finished aioli to taste with a little salt and lemon juice.
- 9. Transfer the aioli to a small bowl, garnish it with a little sweet and sour sauce, and chill it.
- 10. Peel the shrimp and remove the vein.
- 11. Rinse the shrimp under cold running water and let them drain well.
- 12. Thread the shrimp onto the wooden skewers.
- 13. Season the skewers with salt and pepper.
- 14. Preheat the grill or a hot grill stone.
- 15. Grill the shrimp skewers on the hot surface, turning them halfway through.
- 16. Sprinkle the finished skewers with fresh parsley.
- 17. Serve the skewers hot with the aioli on the side.
