🥗 Shrimp Skewers on Salad

Ingredients
- 200 g shrimp (8 shrimp; headless and shell-on)
- 3 handfuls mizuna (or baby salad mix)
- 35 g ginger (1 piece)
- 0.5 lime
- 1 tsp liquid honey
- 1 tsp wasabi paste
- salt
- pepper
- 5 tbsp rapeseed oil
- 1 tsp sesame oil
- 1 tbsp unpeeled sesame seeds
- 12 yellow cherry tomatoes
- 2 spring onions
- 100 g Japanese pickled pumpkin
- 100 g Japanese pickled radish
Instructions
- 1. Make a shallow cut along the back of each prawn with a sharp knife.
- 2. Carefully remove the black intestinal veins.
- 3. Rinse the prawns under cold water.
- 4. Pat the prawns dry with kitchen paper.
- 5. Thread the prawns evenly onto two skewers.
- 6. Thoroughly wash the Mizuna or baby salad greens.
- 7. Spin the salad dry.
- 8. Peel the piece of ginger.
- 9. Grate the ginger finely.
- 10. Place the grated ginger into a garlic press.
- 11. Press the ginger juice directly into a small bowl.
- 12. Squeeze the lime using a lemon squeezer.
- 13. Whisk the lime juice with the honey.
- 14. Add the wasabi powder.
- 15. Season the mixture with a little salt.
- 16. Season the mixture with a little pepper.
- 17. Whisk the ingredients well together.
- 18. Take two-thirds of the rapeseed oil.
- 19. Add the rapeseed oil to the sauce.
- 20. Add the sesame oil.
- 21. Whisk the oils into the sauce.
- 22. Heat a small frying pan.
- 23. Roast the sesame seeds in the pan.
- 24. Take two-thirds of the roasted sesame seeds.
- 25. Stir the hot sesame into the salad dressing.
- 26. Let the remaining sesame seeds cool down.
- 27. Set the cooled sesame seeds aside.
- 28. Wash the cherry tomatoes.
- 29. Halve the cherry tomatoes.
- 30. Wash the spring onions.
- 31. Trim the spring onions.
- 32. Slice the spring onions diagonally into thin rings.
- 33. Cut the pickled pumpkin into small pieces.
- 34. Cut the radish into small pieces.
- 35. Heat the remaining rapeseed oil in a frying pan.
- 36. Salt the prawn skewers.
- 37. Pepper the prawn skewers.
- 38. Fry the skewers from the first side for 3 to 4 minutes.
- 39. Fry the skewers from the second side for 3 to 4 minutes.
- 40. Toss the salad with two-thirds of the sauce.
- 41. Plate the salad on two plates.
- 42. Distribute the tomato halves over the salad.
- 43. Distribute the spring onion rings over the salad.
- 44. Distribute the pumpkin pieces over the salad.
- 45. Distribute the radish pieces over the salad.
- 46. Place one prawn skewer on each plate.
- 47. Drizzle the dishes with the remaining sauce.
- 48. Sprinkle the dishes with the remaining sesame seeds.
- 49. Serve the dishes immediately.
