🍽️ Asian Shrimp Skewers

Ingredients
- 16 peeled shrimp (with tail end)
- 2 garlic cloves
- Juice of 1 lemons
- 5 tbsp olive oil
- 150 ml fish stock (jar)
- 1 small red chili pepper
- 1 spring onion
- 0.5 bunch cilantro (or parsley as a substitute)
- salt
- pepper from the mill
Instructions
- 1. Peel the garlic and chop it very finely.
- 2. Cut the chili pepper in half lengthwise and remove the seeds.
- 3. Rinse the chili pepper and chop it very finely as well.
- 4. Wash the spring onions, trim them, and slice them into fine rings.
- 5. Wash the cilantro (or parsley as an alternative), shake off excess water, and chop the leaves coarsely.
- 6. Mix oil, fish sauce, the chopped garlic, chili, spring onions, cilantro, salt, and pepper to create the marinade.
- 7. Finally, season the marinade to taste with a little lemon juice.
- 8. Wash the shrimp and pat them dry thoroughly with a kitchen towel.
- 9. Place the shrimp in the marinade and let them marinate for about 30 minutes.
- 10. Thread four shrimp onto each skewer.
- 11. Grill the skewers on a hot grill and turn them occasionally.
- 12. Grill the skewers for 4 to 5 minutes.
- 13. Brush the skewers repeatedly with the remaining marinade while grilling.
- 14. Drizzle the finished skewers with the remaining lemon juice at the end.
- 15. Serve the skewers with the leftover marinade.
