  1. 1. Peel the garlic and chop it very finely.
  2. 2. Cut the chili pepper in half lengthwise and remove the seeds.
  3. 3. Rinse the chili pepper and chop it very finely as well.
  4. 4. Wash the spring onions, trim them, and slice them into fine rings.
  5. 5. Wash the cilantro (or parsley as an alternative), shake off excess water, and chop the leaves coarsely.
  6. 6. Mix oil, fish sauce, the chopped garlic, chili, spring onions, cilantro, salt, and pepper to create the marinade.
  7. 7. Finally, season the marinade to taste with a little lemon juice.
  8. 8. Wash the shrimp and pat them dry thoroughly with a kitchen towel.
  9. 9. Place the shrimp in the marinade and let them marinate for about 30 minutes.
  10. 10. Thread four shrimp onto each skewer.
  11. 11. Grill the skewers on a hot grill and turn them occasionally.
  12. 12. Grill the skewers for 4 to 5 minutes.
  13. 13. Brush the skewers repeatedly with the remaining marinade while grilling.
  14. 14. Drizzle the finished skewers with the remaining lemon juice at the end.
  15. 15. Serve the skewers with the leftover marinade.
