  1. 1. Wash the zucchini thoroughly.
  2. 2. Trim the hard ends off the zucchini.
  3. 3. Use a vegetable peeler to shave long, thin strips from the zucchini.
  4. 4. Bring water to a boil and add some salt.
  5. 5. Boil the zucchini strips in the salted water for 1 to 2 minutes (this is called blanching).
  6. 6. Remove the zucchini from the hot water immediately.
  7. 7. Place the strips in a bowl of ice-cold water to cool them down quickly.
  8. 8. Drain the water from the zucchini.
  9. 9. Pat the zucchini strips dry with a kitchen towel.
  10. 10. Take one shrimp and wrap it in a zucchini strip.
  11. 11. Season the shrimp with salt and pepper.
  12. 12. Thread the shrimp onto a small wooden skewer.
  13. 13. Serve the finished skewers garnished with lime wedges.
