🍽️ Grilled Shrimp and Scallops with Orange Sauce

Ingredients
- 1 clove garlic
- 1 shallot
- 1 tbsp butter
- 1 tsp fresh thyme leaves
- flour
- juice of 2 oranges
- 125 ml white wine
- 2 tbsp crème fraîche
- salt
- pepper from the mill
- 1 pinch sugar
- 8 large shrimp (raw)
- 4 scallops
- 1 tbsp oil
- 40 g chopped pistachios
- zest of orange (organic)
- thyme (for garnish)
Instructions
- 1. Peel the garlic clove and the shallot and cut them into small cubes.
- 2. Heat the butter in a pan.
- 3. Add the garlic, shallot, and thyme to the pan and sauté them briefly.
- 4. Sprinkle the flour over the mixture and let it toast briefly.
- 5. Deglaze the pan with orange juice and white wine.
- 6. Simmer the sauce over low heat for 5 minutes while stirring.
- 7. Strain the sauce through a fine sieve to make it smooth.
- 8. Stir the crème fraîche into the strained sauce.
- 9. Season the sauce with salt, pepper, and a pinch of sugar.
- 10. Rinse the shrimp and scallops briefly and pat them dry with kitchen paper.
- 11. Heat oil in a large pan.
- 12. Sear the shrimp and scallops briefly in the hot oil.
- 13. Stir the pistachios and orange zest into the prepared sauce.
- 14. Place the shrimp and scallops into heatproof ramekins.
- 15. Pour the sauce over the seafood in the ramekins.
- 16. Preheat your oven's grill.
- 17. Place the ramekins on the middle rack and grill the dishes for 2 to 3 minutes.
- 18. Serve the dish garnished with pistachios, orange zest, and fresh thyme.
