  3. 3. Add the garlic, shallot, and thyme to the pan and sauté them briefly.
  4. 4. Sprinkle the flour over the mixture and let it toast briefly.
  5. 5. Deglaze the pan with orange juice and white wine.
  6. 6. Simmer the sauce over low heat for 5 minutes while stirring.
  7. 7. Strain the sauce through a fine sieve to make it smooth.
  8. 8. Stir the crème fraîche into the strained sauce.
  9. 9. Season the sauce with salt, pepper, and a pinch of sugar.
  10. 10. Rinse the shrimp and scallops briefly and pat them dry with kitchen paper.
  11. 11. Heat oil in a large pan.
  12. 12. Sear the shrimp and scallops briefly in the hot oil.
  13. 13. Stir the pistachios and orange zest into the prepared sauce.
  14. 14. Place the shrimp and scallops into heatproof ramekins.
  15. 15. Pour the sauce over the seafood in the ramekins.
  16. 16. Preheat your oven's grill.
  17. 17. Place the ramekins on the middle rack and grill the dishes for 2 to 3 minutes.
  18. 18. Serve the dish garnished with pistachios, orange zest, and fresh thyme.
