🍽️ Grilled Shrimp Skewers with Mango Dip

Ingredients
- 6 wooden skewers
- 2 organic oranges (juice)
- 3 tbsp lime juice
- 1 garlic clove
- 2 tsp freshly grated ginger
- 2 tbsp olive oil
- 0.5 tsp ground cumin
- salt
- 1 tsp raw cane sugar
- cayenne pepper
- 1 ripe mango
- 3 tbsp white rum
- 1 white onion
- 12 large shrimp (peeled, ready to cook)
Instructions
- 1. Peel the garlic clove and the shallot.
- 2. Chop the garlic and shallot very finely.
- 3. Put the lemon juice, olive oil, chopped garlic, shallot, ginger, cumin, and a pinch of salt into a small pot.
- 4. Let the spice mixture infuse briefly.
- 5. Add the sugar and a little cayenne pepper.
- 6. Bring the mixture to a boil.
- 7. Simmer the sauce for about 5 minutes.
- 8. Peel the mango.
- 9. Cut the flesh into thick slices away from the pit.
- 10. Puree half of the mango flesh with the rum.
- 11. Gently warm the remaining mango sauce.
- 12. Keep the sauce warm.
- 13. Cut the remaining mango flesh into 12 small cubes.
- 14. Peel the white onion.
- 15. Cut the onion lengthwise into 6 wedges.
- 16. Thread mango cubes, shrimp, and onion wedges alternately onto each wooden skewer.
- 17. Grill the skewers under the hot grill.
- 18. Grill them for about 3 minutes on each side.
- 19. Remove the skewers from the grill when the shrimp are opaque.
- 20. Brush the skewers generously with the orange sauce at the end of the grilling time.
- 21. Grill them briefly again until the sauce shines.
- 22. Serve the shrimp skewers with the warm mango sauce.
