🍽️ Shrimp Beef Fillets and Roast Beef Rolls

Ingredients
- 4 Chateaubriand (double-thick beef fillets from the center cut)
- 3 tbsp Oil
- Salt
- Pepper (from the mill)
- 8 larger Shrimp
- 8 slices pink-seared Roast Beef (from the butcher)
- 30 g dark Chocolate (80% cocoa content)
- 4 long String Beans
Instructions
- 1. Tie the meat tightly with kitchen twine so it keeps its shape.
- 2. Boil the green beans for ten minutes in salted water, drain them, shock them with cold water, dry them, and cut them in half lengthwise.
- 3. Heat two tablespoons of Oil in an ovenproof pan and sear the meat well on all sides. Remove the pan from the heat, season the meat with Salt and Pepper, and finish baking it in the preheated oven at 200 degrees for about five minutes.
- 4. Meanwhile, wash the Shrimp, pat them dry, and fry them in the remaining Oil for four to five minutes all over.
- 5. Melt the chopped Chocolate in a double boiler. Roll up the Roast Beef slices, tie a halved Bean in the middle of each, and briefly dip the ends of the rolls into the melted Chocolate.
- 6. Cut the medallions in half crosswise for serving. Place one Shrimp on the lower half. Make a crosswise incision in the upper half with a sharp knife and insert one Shrimp there (remove the heads beforehand if necessary), then place it on the lower half. Serve with the Roast Beef rolls.
