🍕 Shrimp Pizza with Artichoke Hearts

Ingredients
- 600 g yellow tomatoes
- 16 artichoke hearts (jar)
- 50 g green olives (pitted)
- 450 g shrimp (frozen, headless and peeled)
- 4 pizza bases
- flour (for working)
- 3 tbsp olive oil
- salt
- pepper
- 4 sprigs lemon thyme
Instructions
- 1. Cut out the hard stem areas from the tomatoes in wedge-shaped slices.
- 2. Dip the tomatoes briefly into boiling water and remove them immediately.
- 3. Rinse the tomatoes under cold water to cool them down.
- 4. Peel the skin off the tomatoes.
- 5. Cut the peeled tomatoes into quarters.
- 6. Remove the inside (seeds and pulp) from the tomato quarters.
- 7. Halve the cored tomato quarters crosswise.
- 8. Drain the artichoke hearts well.
- 9. Halve the artichoke hearts.
- 10. Chop the olives coarsely.
- 11. Let the shrimp thaw.
- 12. Pat the thawed shrimp dry with a kitchen towel.
- 13. Slice the shrimp open along the back.
- 14. Remove the black vein from the shrimp.
- 15. Divide the pizza dough into four equal parts.
- 16. Dust the work surface with flour.
- 17. Roll each dough part into a circle about 1 cm thick.
- 18. Place the dough circles on two lightly floured baking sheets.
- 19. Prepare the ready-made pizza bases according to the package instructions.
- 20. Place the ready-made pizza bases on two baking sheets as well.
- 21. Brush each dough circle with a little olive oil.
- 22. Distribute the tomato pieces on the pizzas.
- 23. Place the halved artichoke hearts on the pizzas.
- 24. Sprinkle the chopped olives over the pizzas.
- 25. Season the pizzas with salt and pepper.
- 26. Preheat the oven to 240 °C (fan: 220 °C, gas: level 4-5).
- 27. Place the pizzas on the lowest rack of the oven.
- 28. Bake the pizzas for 10 minutes.
- 29. Remove the pizzas from the oven briefly.
- 30. Distribute the shrimp on the pizzas.
- 31. Place the pizzas back in the oven.
- 32. Bake the pizzas for another 7 minutes.
- 33. Wash the thyme under cold water.
- 34. Pluck the small thyme leaves from the stems.
- 35. Sprinkle the thyme leaves over the pizzas shortly before the end of the cooking time.
