🍲 Creative Shrimp Balls with Noodles in Spicy Broth

Ingredients
- 150 g Mie noodles
- salt
- 2 tsp sesame oil
- 350 g shrimp (ready for cooking)
- 1 slice turkey bacon
- 1 bunch spring onions
- 1 piece ginger (approx. 3 cm long)
- 1 egg
- pepper
- 1 small organic lemon
- 1 l poultry broth
- 1 star anise
- 200 g snow peas
- 3 tbsp soy sauce
- chili oil (to taste)
Instructions
- 1. Cook the noodles in salted water according to the package instructions.
- 2. Rinse the noodles under cold water and let them drain well.
- 3. Mix the drained noodles in a bowl with the sesame oil.
- 4. Rinse the shrimp and pat them dry with a kitchen towel.
- 5. Chop the shrimp very finely using a hand blender, food processor, or a large heavy knife.
- 6. Dice the bacon very small.
- 7. Trim two spring onions, wash them, and chop them finely.
- 8. Peel the ginger and chop it finely as well.
- 9. Combine the chopped shrimp, bacon, spring onions, and ginger in a bowl.
- 10. Add an egg to the mixture and season with salt and pepper.
- 11. Mix all filling ingredients thoroughly with your hands or a spoon.
- 12. Wash the lemon and dry it thoroughly.
- 13. Peel off a piece of lemon zest about five centimeters long and set it aside.
- 14. Bring two liters of lightly salted water to a boil in a pot.
- 15. Reduce the heat so that the water is only simmering gently.
- 16. Form small balls from the shrimp mixture using a spoon.
- 17. Carefully let the balls slide from a slotted spoon into the hot water.
- 18. Cook the balls for about three minutes in the gently simmering water.
- 19. Remove the shrimp balls with a skimmer and let them drain.
- 20. Bring the broth to a boil with the lemon zest and star anise.
- 21. Trim and wash the snow peas.
- 22. Trim the remaining spring onions, wash them, and slice them into thin rings.
- 23. Add the snow peas to the boiling broth and cook for one minute.
- 24. Warm the shrimp balls and noodles in the soup.
- 25. Add the soy sauce to the soup and stir well.
- 26. Fill the soup into bowls.
- 27. Sprinkle the soup with the sliced spring onions.
- 28. Drizzle with some chili oil if desired and serve the dish.
