🍽️ Chili and Garlic Marinated Shrimp served with Rice and Snow Peas

Ingredients
- 500 g Tiger Prawn (peeled and deveined, ready to cook)
- 1 red chili pepper
- 2 garlic cloves
- 2 cm fresh ginger
- 3 tbsp light sesame oil
- 300 g Basmati rice
- salt
- 200 g snow peas
- light soy sauce
- coriander leaves (for garnish)
Instructions
- 1. Rinse the shrimp under cold water.
- 2. Pat the shrimp dry with a kitchen towel.
- 3. Wash the chili pepper thoroughly.
- 4. Cut the chili pepper in half lengthwise.
- 5. Remove the seeds and white pith from the chili pepper.
- 6. Dice the chili pepper finely.
- 7. Peel the garlic.
- 8. Peel the ginger.
- 9. Finely chop the garlic and ginger.
- 10. Mix the shrimp with the oil, chili, garlic, and ginger.
- 11. Cover the bowl.
- 12. Marinate the mixture in the refrigerator for about 30 minutes.
- 13. Rinse the rice in a sieve under running water.
- 14. Put the rice into a pot.
- 15. Add double the amount of water to the rice.
- 16. Lightly salt the water.
- 17. Bring the water and rice to a boil.
- 18. Reduce the heat to a moderate level.
- 19. Cover the pot.
- 20. Let the rice cook for about 20 minutes until the water is absorbed.
- 21. Wash the snow peas.
- 22. Bring a pot of salted water to a boil.
- 23. Add the snow peas to the boiling water.
- 24. Cook the snow peas for 2 to 3 minutes (this is called blanching).
- 25. Remove the snow peas from the water.
- 26. Shock them immediately with cold water to stop the cooking process.
- 27. Let the snow peas drain well.
- 28. Heat a large pan or wok.
- 29. Add the marinated shrimp along with the oil to the hot pan.
- 30. Fry the shrimp, stirring constantly, for 1 to 2 minutes.
- 31. Add the snow peas to the shrimp.
- 32. Fry the snow peas briefly with the shrimp.
- 33. Season the mixture with soy sauce to taste.
- 34. Place the rice on the plates.
- 35. Serve the shrimp and snow peas on top of the rice.
- 36. Garnish the dish with fresh coriander leaves.
- 37. Serve the dish immediately.
